On this episode of Guest Vendor Blog Series, we’ve got the amazing Ruthi Hutson here to talk with you about your wedding cake! From choosing flavors, to icing desires and design, Ruthi is amazing and has some great advice for you! Take it away Ruthi!
I’m Ruthi Hutson Cakes and I’m obsessed with Italian meringue buttercream! I primarily cater to brides and larger scale events like weddings, anniversaries, showers & events. My goal is art that tastes as good as it looks.
Most of my communication with brides is via email or at a tasting. I love doing tastings because, the cakes speak for themselves. The buttercream, the fillings, the moist cake & fun conversations make it so worth it! We get to sit down together and figure out what suits that event best. It’s so fun for me.
But, I realize to many people, cake tastings & choosing flavors is daunting. Knowing your budget & your general design plan is important. There are a million cake pictures on Pinterest and it feels like you have to pick the perfect one. Show me a few. Let me sketch & work my magic, instead of you stressing to find the perfect cake inspiration…let me do that for you. I want to make you a one of a kind cake.
We live in Texas. I make buttercream. What gives in the summer months? Wedding Wire & the Knot have a lot of really great info on choosing your cake vendor. I’m pretty laid back, so I find a lot of their checklists are a little much…however they do caution brides about considering the climate. Ummm. Yep. Buttercream will melt in Texas. But you know what else melts? Hydrangeas, Peonies, Groomsmen, Fondant… Nothing doesn’t melt in Texas. You just have to be smart about how long you let your cake stay outside for an outdoor reception….and hopefully you have air conditioning for the indoor reception. Don’t let it be in direct sunlight for longer than 15 minutes in the summer outside. Basically the same time frame the Groom has to survive that heat in a three piece suit for the ceremony. Whatever you do, don’t sacrifice taste because you are getting married in July, just find a vendor that is confident with their cake construction!
The cake industry is getting more and more progressive with wedding cakes. Most brides know if they want to do a chicken and waffles cake adorned with ice cream cones and rainbow kittens…they can “you do you” the mess out of their reception. However, when it comes to flavor, people still get pressured into having what they feel will be the biggest people pleasers for flavor. A wedding is about the bride and groom. Get the Dr Pepper cake or Lemon or Carrot or Coconut.
Make the whole thing Vegan, GF or Paleo. If it represents your vision, it will be great!
